In New York, securing a dining reservation has become increasingly difficult over the past three years, with many food enthusiasts finding it nearly impossible to get a seat at the city’s most sought-after restaurants.

Joel Montaniel, CEO of the booking platform Sevenrooms, shared insights with Bloomberg, stating that some restaurants are simply inaccessible. He noted that restaurateurs have confessed to lacking any tips for securing reservations at their establishments.

The situation has escalated to the point where the New York state legislature recently passed a law banning third-party booking sites like Appointment Trader, which had allowed users to resell restaurant reservations for exorbitant prices, similar to scalping tickets for concerts and sporting events.

Melissa Fleischut, President & CEO of the New York State Restaurant Association, hailed the new legislation as a significant win for the hospitality sector, aiming to limit competition for reservations and protect restaurants from costly no-shows.

Despite these legislative efforts, the ongoing trend remains that the demand for trendy and luxurious dining experiences continues to outpace supply. Travel advisor Jaclyn Sienna India highlighted this trend, noting that following the COVID-19 pandemic, high demand is evident across various sectors, including airlines, hotels, and restaurants.

India, who operates Sienna Charles, a concierge service for wealthy clients, has extensive experience in securing exclusive reservations. She emphasizes that access to popular dining venues depends on understanding customer desires and cultivating strong relationships with restaurant owners.

She also pointed out a notable shift in dining preferences, stating that clients rarely seek fine dining experiences. Instead, the focus has shifted to trendy establishments where the appeal lies more in the experience and the social status associated with gaining access rather than in the food itself.
