Joel Montaniel, CEO of the booking platform Sevenrooms, noted that some restaurants have become virtually impossible for patrons to access. Even restaurateurs themselves admit they struggle to provide tips for achieving a reservation.
Recent legislative action reflects this heightened struggle. Last month, the New York state legislature passed a law banning third-party booking sites such as Appointment Trader, which allowed users to resell restaurant reservations for hefty prices, sometimes exceeding $200. This kind of reservation scalping was traditionally seen with concert and sporting event tickets.
Melissa Fleischut, President & CEO of the New York State Restaurant Association, hailed the legislation as a protectant for the hospitality industry, arguing it would mitigate competition for reservations and shield restaurants from costly cancellations.
Despite these changes, the demand for trendy dining experiences remains substantially higher than supply. Travel advisor Jaclyn Sienna India observed that the post-pandemic landscape has seen a surge in bookings across all sectors, from airlines to restaurants to hotels.
India, who has extensive experience as a concierge servicing high-net-worth clients, emphasized the importance of understanding customer desires and fostering relationships with restaurant managers to secure coveted reservations. She pointed out that there has been a noticeable shift in consumer preferences towards trendy eateries that prioritize social experiences over traditional fine dining.
