Joel Montaniel, CEO of the reservation platform Sevenrooms, stated in a recent interview that certain restaurants have become almost impossible to access. He noted that even restaurateurs often lack strategies for obtaining reservations in this competitive landscape.

The situation has prompted legislative action, with the New York state legislature recently voting to ban third-party booking sites like Appointment Trader, which allowed users to sell coveted restaurant reservations for inflated prices, similar to concert ticket scalping.

Melissa Fleischut, President and CEO of the New York State Restaurant Association, hailed the new legislation as a significant win for the hospitality sector, claiming it would alleviate the competition for reservations and assist restaurants in managing costly last-minute cancellations.

Despite these changes, the reality remains that the demand for trendy and upscale dining experiences continues to outpace availability. Travel advisor Jaclyn Sienna India remarked on the post-pandemic surge in bookings for flights, restaurants, and hotels, indicating that the demand is higher than ever.
