Joel Montaniel, CEO of the booking platform Sevenrooms, shared insights with Bloomberg, stating that many restaurants are so exclusive that even restaurateurs struggle to advise on securing reservations. He noted, “There are some restaurants that people can’t get into.”
The competition for dinner reservations has escalated to the point where the New York state legislature recently voted to outlaw third-party booking services like Appointment Trader, where reservation slots were being resold for significant sums, echoing practices typically seen in the concert and sports ticket markets.
Melissa Fleischut, President & CEO of the New York State Restaurant Association, hailed the legislation as a significant win for the hospitality sector, aimed at lessening competition for reservations and shielding restaurants from costly no-shows.
Despite these legislative efforts, the surge in appetite for unique and upscale dining experiences continues to outpace availability. Travel advisor Jaclyn Sienna India observed, “Post-COVID, I’m sure you’ve noticed that everything is booked up; every plane, restaurant, and hotel is full.” As the head of Sienna Charles, a concierge service for ultra-wealthy clientele, India has spent 16 years navigating this high-demand environment for affluent families.
India points out that gaining access to the trendiest restaurants—and hotels or luxury experiences—hinges largely on understanding client needs and nurturing relationships with restaurant owners. She highlighted a shift in dining preferences, explaining, “People have really moved away from fine dining,” noting that rare are clients who desire a lengthy tasting menu. Instead, the trend has veered towards stylish venues that prioritize social status over cuisine, emphasizing the rush to experience and share those coveted reservations.
