According to Joel Montaniel, CEO of the bookings platform Sevenrooms, the situation has evolved to the point where some restaurants are nearly impossible to access. Montaniel noted that even restaurateurs he has consulted have been unable to offer helpful tips for securing a table.

The competitive landscape for dinner reservations hit a tipping point last month when the New York state legislature voted to outlaw third-party booking sites like Appointment Trader, which allowed users to sell restaurant slots for exorbitant prices, reminiscent of ticket scalping for concerts or sporting events. Melissa Fleischut, President & CEO of the New York State Restaurant Association, praised the legislation as a significant win for the hospitality sector, aiming to lessen reservation competition and shield eateries from costly cancellations.

Despite this legislative change, the demand for exclusive and trendy dining experiences remains robust and often exceeds supply. Travel advisor Jaclyn Sienna India pointed out that the post-COVID landscape reflects a full house everywhere—from planes to hotels to restaurants. India notes that gaining access to sought-after dining experiences hinges on a few critical factors.
