In response to the growing competitive nature of dinner reservations, the New York state legislature recently approved a ban on third-party booking sites like Appointment Trader, which allowed users to resell restaurant slots for inflated prices, sometimes reaching $200. This practice mirrored the resale market for concert and sporting event tickets.

Melissa Fleischut, President and CEO of the New York State Restaurant Association, hailed the new legislation as a significant win for the hospitality sector, believing it will lessen reservation competition and safeguard restaurants from costly no-shows.

Despite these legislative efforts, the demand for trendy dining experiences continues to outstrip supply, reflecting the broader trends seen in post-pandemic travel and hospitality. Jaclyn Sienna India, a travel advisor with 16 years of experience managing luxury concierge services, noted the challenges created by a surplus of bookings across various sectors.

India, whose clientele includes ultra-wealthy families, emphasized that successfully securing access to exclusive dining experiences hinges on understanding what diners want and fostering relationships with the restaurants.

“There’s been a notable shift away from fine dining. Clients rarely request tasting menus anymore,” she explained. “The focus now is on trendy spots that cater to social status; it’s more about the experience and less about the food.”
