This month, New York state lawmakers approved a ban on third-party reservation services like Appointment Trader, which allowed individuals to sell their restaurant spots for significant sums, mirroring practices in the concert and sports arenas. Melissa Fleischut, President & CEO of the New York State Restaurant Association, hailed the legislation as a crucial win for the hospitality sector, aimed at diminishing reservation competition and shielding restaurants from costly no-shows.

Despite these regulatory efforts, demand for trendy and luxurious dining experiences continues to exceed supply in the post-pandemic landscape. Travel advisor Jaclyn Sienna India notes the shift, pointing out that flights, restaurants, and hotels are often fully booked.

India, who has specialized in concierge services for extremely wealthy clients for 16 years, believes that access to top-tier dining relies on understanding customer preferences and establishing strong relationships with restaurants. She notes that the focus of dining experiences has evolved, with many clients now gravitating towards trendy venues rather than traditional fine dining, driven by a desire for experiences that can be shared.
