Joel Montaniel, CEO of the booking platform Sevenrooms, noted the extreme difficulty, stating that even restaurant owners lack advice on how patrons can successfully book tables at their establishments.

Recently, the New York state legislature took action, voting to ban third-party reservation services like Appointment Trader, which were facilitating the resale of dining reservations for up to $200—an issue previously seen mainly in the entertainment sector for concerts and sports events.

Melissa Fleischut, President & CEO of the New York State Restaurant Association, hailed the legislation as a triumph for the hospitality sector, as it aims to level the playing field for reservations and shield restaurants from costly no-shows.

Despite these legislative efforts, the demand for trendy and luxurious dining experiences continues to exceed supply. Travel advisor Jaclyn Sienna India observed that since the pandemic, every aspect of travel and dining has been oversubscribed. India, who operates a luxury concierge service for wealthy clientele, acknowledges the challenge of securing reservations but highlights the importance of knowing what customers want and cultivating relationships with restaurants.

According to India, the landscape of dining preferences has shifted dramatically over the years, moving away from traditional fine dining towards trendy venues that prioritize experience over gourmet food. Customers are increasingly focused on the social aspect of dining—sharing the experience as a badge of honor rather than purely for culinary enjoyment.
