Securing a reservation at a restaurant in New York City has become increasingly difficult in recent years, reaching a level of competition that many food enthusiasts find insurmountable. The situation has become so dire that last month, New York’s state legislature enacted a ban on third-party booking sites like Appointment Trader, which had allowed users to sell restaurant reservations for exorbitant amounts, sometimes over $200.

Melissa Fleischut, President & CEO of the New York State Restaurant Association, hailed the legislation as a significant win for the hospitality sector, which aims to lessen reservation competition and protect restaurants from costly no-shows.

Despite these legislative efforts, the demand for unique and luxurious dining experiences continues to exceed availability. Travel advisor Jaclyn Sienna India highlighted this trend, noting that post-COVID, nearly all travel sectors—from flights to accommodations—are fully booked.

India, who has run a concierge service for affluent clients for 16 years, including high-profile figures like George W. Bush and Mariah Carey, has insights into securing such experiences. She emphasizes that gaining access to top restaurants goes beyond just making a reservation. It involves understanding customer preferences and fostering relationships with restaurateurs.

She pointed out a notable shift away from traditional fine dining, mentioning that clients now prefer trendy establishments that cater to a desire for unique experiences over a focus on the food itself. The allure often stems from exclusivity, creating a sense of bragging rights among patrons.
