Joel Montaniel, CEO of the booking platform Sevenrooms, noted that some restaurants are so exclusive that even restaurateurs admit they struggle to find tips for garnering a table. The situation has become so competitive that New York state lawmakers recently decided to prohibit third-party booking sites like Appointment Trader, which allowed users to sell reservation slots for $200 or more, a practice that mirrors ticket scalping for concerts or sports events.
Melissa Fleischut, President and CEO of the New York State Restaurant Association, hailed the legislation as a significant win for the hospitality sector, aimed at reducing reservation competition and safeguarding restaurants from costly cancellations.
Despite these legislative efforts, the demand for unique and luxurious dining experiences shows no signs of abating. Travel advisor Jaclyn Sienna India observed that post-pandemic, establishments are consistently full, with every restaurant, hotel, and flight booked to capacity.
India, who has spent 16 years managing Sienna Charles, a concierge service catering to ultra-wealthy clients, emphasizes that successfully landing reservations at popular spots hinges on understanding customer preferences and maintaining relationships with restaurants.
She pointed out a shift in dining trends, noting that clients are increasingly moving away from traditional fine dining with multi-course tasting menus to more trendy eateries that prioritize the experience over the food itself. This evolution reflects a broader cultural trend where dining out is more about social media bragging rights than the culinary experience.
