Joel Montaniel, CEO of the booking platform Sevenrooms, noted in a conversation with Bloomberg that some restaurants have become nearly impossible to access. Even established restaurateurs admit they lack the strategies to help patrons secure reservations.

In an effort to combat the booming reservation market, the New York state legislature recently voted to prohibit third-party booking platforms like Appointment Trader, which allowed users to sell restaurant reservations for exorbitant prices, similar to ticket scalping in the concert world.

Melissa Fleischut, President and CEO of the New York State Restaurant Association, hailed the legislation as a significant win for the hospitality sector, aimed at minimizing reservation competition and safeguarding restaurants from costly no-shows.

Despite these legislative efforts, the growing demand for trendy and upscale dining experiences remains overwhelming. Travel advisor Jaclyn Sienna India, who has spent 16 years managing Sienna Charles, a high-end concierge service for wealthy clients, noted the post-COVID surge in bookings across various sectors, including restaurants, hotels, and travel.

India points out that even with her connections and experience serving elite clients, access to the most desirable venues hinges on a few key elements: knowing customer preferences and fostering relationships with the restaurants that can fulfill those needs.

Interestingly, she observes a shift in dining preferences, with fewer clients interested in traditional fine dining or lengthy tasting menus. Instead, patrons are gravitating toward trendy venues where the experience takes precedence over the culinary offerings. This trend highlights the desire for memorable dining experiences and the social status that comes with securing reservations at in-demand locations.
